HDD/DVD recorder. The dubbing was done at "normal" speed because
the original programme was recorded to HDD with the High Speed copy
setting at OFF - ie it doesn't record in 4:3.
My TV is widescreen 16:9 and I have the picture set to AUTO. At
this setting, the original and HDD recording both display OK (normal
people subtitles in view etc).
When I start to play back the DVD version the picture changes to a
different setting (thin people and I lose part of the subtitles). I
don't really know what format this is , whether it is 4:3 or what. I
have to manually change the TV setting from auto to widescreen to get
it to display correctly.

From the description, the signal you recorded is in 16:9 format.

widescreen.

There is such a flag in the DVD-Video format but it can not change
within a Title. This is the reason all (?) DVD-Recorders sets this
flag to 4:3.
My Philips Recorder (+R/RW) use an add-on feature so that when the
disc is played by the recorder itself, it replicates the flag
dynamically (in the SCART connection) to control a TV. This is not
possible within the DVD-Video standard, so when played in a DVD-Player
it only flags 4:3.

setting I am missing to get the DVD dubbed picture to display
widescreen automatically?

I'm not familiar with it. From what I heard, Panasonic DVD-Recorders
require you to use the manual setting in the TV.
If you copy the disc in a PC, you can use a free PC program (IFOEdit)
to change the flag (per Title) to make the disc signal the format.
