How can one convert a powerpoint slide show .ppt
to a .mpeg file?

You can save it out to an .AVI file, then import that and re-save.

You could play it out of the camputer into a recorder, then digitize
the recording, this adds extra A-D conversions and lessens quality.

Camtasia it off the computer, again, I think this only records as .AVI,
so you'd have to import that into your application of choice to make it
mpeg.

Export the slides from PPT as JPEGS or similar into your DVD authoring
application or your NLE and save it out as mpeg.

That's a few ways to do it.

Just exactly how do I save it as an avi file?
Is that a function of Powerpoint or is there a seperate program?

You can get Producer for Powerpoint, which allows you to narrate the
slides, so you get a video with voiceover. However afaik it only lets
you output to WMV not to MPEG - it depends if your NLE can import
windows media video. I can check the output formats later, though I
expect you'll have downloaded it by then :
