My ex wife has an old Matsui VX1000 Y VCR and it sounds like the
tracking has gone so my kids can't watch their videos.

Does anyone know how to adjust the tracking on this model?

firstly - do you have the remote?
most vcrs have 90% of buttons on it. If not then you will need a
replacement.
Turn off auto tracking see if that helps.

BTW, it is impossible for the tracking to have "gone".What you have is
likely a mechanical misalignment or other fault.
open the vcr and check for bits of lables, etc. stuck in the tape
path.
if nothing is there, check:

-A/c head is clean
-Pinch roller is not shiny, warped or cracked
- video heads are clean - leave a new tape running for an hour to work
out the dirt and check if things have improved

post back here if the above doesn't work

You mean don't take a screwdriver to all the guides then spray WD40 all over
the internals to make em work better ;-)

i think that's a good summary.
seen a few of those basket-cases in my time, but the worst has to be a
"faulty fuse", "repaired" by using cigarette paper or foil as a
substitute!
