I'm using a Sony Handycam DCR-HC85 to record church sermons in a small
church. The first batch I recorded had great picture quality but poor
sound quality. The acoustics of the room weren't great and I just
used the on-camera mic to record sound. I cleaned up what I could in
editing, but don't want to have to do that again as it is time
consuming. We're planning on getting a directional mic for the
camera. I'm hoping this will help with the sound quality. I also
recorded it in 12bit originally. Will using 16bit make that much of a
difference? Will using the directional mic help? Any other settings
on the camera itself I can manipulate to get the best possible audio
recording?

Yes, switching to 16 bits will help a bit, and it's free and easy. But
the best improvement will come from getting the mic as close as possible
to the speaker -- preferably just a few inches from his/her lips. If you
want really good sound, I strongly suggest that you get and read a copy
of Jay Rose's book: Great Sound for Digital Video.
